Structurally, it belongs to the polyene macrolide antibiotics family. In the food industry, it is widely used as a preservative. It can be applied to the surface of various food products such as cheeses, sausages, and bakery items to prevent the growth of molds and yeasts, thus significantly extending their shelf life. Its mode of action involves binding to ergosterol in the fungal cell membrane, disrupting the membrane integrity and leading to cell death. In the pharmaceutical field, it is used in some topical antifungal medications, especially for treating superficial fungal infections of the skin and mucous membranes.
